Homemade Tom Yum paste is very convenient to store. It does not spoil and can be stored in the refrigerator for several months, although its spiciness and aroma may diminish slightly over time. To prepare classic Thai Tom Yum soup, use one and a half to two tablespoons of paste per two servings. Simply add it to the broth during cooking. The paste should be thick, not runny, and not drip off the spoon. If the consistency is not right the first time, experiment with proportions to your taste.
