Yes, Thai cuisine is indeed spicy, and what a local considers "a little spicy" can be a real challenge for a European. So the first phrase worth learning before your trip is "No spicy" (no spicy) or "Little spicy" (little spicy). And don't hesitate to repeat it with every order, especially if you're getting Som Tam or Tom Yum.

However, be prepared that even after "no spicy" the dish will still turn out a bit spicy – it's the Thai mentality, spiciness is part of the taste for them. Just accept it and ask for more water or cold coconut, they perfectly quench the burning.

Tip: Start getting acquainted with the cuisine gradually. First order non-spicy dishes (Pad Thai, Khao Pad, Tom Kha Kai), and move on to spicy ones after a couple of days when your stomach has adapted a bit.

The main principle of Thai cuisine is the balance of five flavors: sweet, salty, sour, bitter, and spicy. A single dish can have all at once, and it works. You get used to it literally in a couple of days, and then European food seems bland. Read more about the nuances of ordering in our guide to Thai cuisine for beginners.
