To get change in dollars, not in Egyptian pounds, you need to follow a simple but ironclad rule: discuss all conditions, including the currency of change, BEFORE you give the seller money.

Step-by-step algorithm:

  1. First, bargain and agree on the final price in dollars.
  2. Clearly say: "Okay, I'm paying [amount] dollars. Change, please, also in dollars." You can show your large bill and ask: "Will you have change in dollars?".
  3. Only after receiving confirmation that the change will be in dollars, hand over the money.

If you first hand over the bill and then ask for dollar change, the seller will almost certainly make surprised eyes and say that they only have pounds. They will offer you change at their own, usually inflated, rate. In such a situation, it will be very difficult for you to insist on your own.

This rule works everywhere: in markets, souvenir shops, when paying for taxis or excursions. Remember, the initiative is in your hands as long as the money has not physically passed to the seller.
