Which mobile internet volume (which tariff) should I choose in Vietnam?

You don't need to take a lot of internet. From our experience of active travel, we know that together with hotel WiFi (which is available almost everywhere) for a 30-day trip, we rarely exceeded 30GB with active use of social networks, messengers, browsing websites and for navigation on maps. But all this is without video, since watching video consumes the most traffic. Therefore, if you want to watch movies while relaxing on the beach, you need to take much more.
Currently in Vietnam, tariffs with daily limits are popular, i.e. when the tariff, for example, is valid for 30 days, and each day you are given several gigabytes that do not carry over to the next day. For example, last time we took 6GB/day, and that's a lot, we almost never exceeded 2GB/day on two devices. So you can safely take such a tariff, it will be enough even for watching videos.
